The name “burnt ends” doesn’t sound very appealing does it? After all anything burn can’t be good, right? Well, the name may not be the best but the dish is out of this world. So, what are burnt ends?
It’s simply the end pieces of a smoked brisket. They are covered in a delicious sweet sauce and served hot. And they are DELICIOUS. You can find them on our menu under appetizers.
Several BBQ hotbeds take credit for being the first to serve burnt ends as a separate dish. One very credible location is that of Kansas City, Mo. A website based there seems to have a lot of information regarding the sweet treat and even refers to it as “Kansas City caviar”. Although, that same website says the popularity of the dish is on the decline. In Melbourne Florida, however, we have not found that to be true.
How and Why
The “burnt ends” result because the way brisket is prepared. The ends of the brisket cook faster than the middle. The burnt appearance is called “char”. But really it is just delicious condensed brisket flavor.
If you want to attempt to make your own burnt ends, there are many recipes online. Or you can save yourself the headache and have us do the work.
No part of the delicious brisket goes to waste. And the ends are just as tasty. Especially if they are covered in a sweet sauce. Maybe they should have called the dish “sweet ends”? Who knows.
