Burnt Ends are referred to as “the old pig candy”. This was what they called pig candy before the newest incarnation of that dish. So what are burnt ends? The name doesn’t sound that delicious, does it? But the name is misleading.
As BBQ became more popular and in-demand, pitmasters would set aside the end pieces that may be tougher, drier, or oddly shaped. Many times the ends and edges could be the fattiest part of the meat and cooks would put them into stews or make them into hardy appetizers.
It wasn’t long before some pitmasters realized the power of these morsels and began to re-smoke them and cover them in a delicious sweet sauce. The practice started in the 1970’s to be exact and burnt ends lovers haven’t looked back.
They are pretty much a staple of any real BBQ place in the south, all the way up to Kansas City and beyond. You can find this item in the “starters” section of our menu.
