The History of Key Lime Pie

history of key lime pieLike most Florida restaurants, we offer key lime pie on our desert menu. It is truly delicious and if you love the sweetness and tartness of key lime pie, you must try ours.

Our key lime pie is popular with our customers, and that inspired us to write an article about key lime pie. There are many stories for origin of key lime pie. The one described below is the most commonly accepted.

First, lets talk about the lime itself. It is believed the key lime first came to Florida in the 1500’s with Spanish explorers. The lime is native to Malaysia. The climate of the keys are great for growing this fruit. It is a little known fact that most key lime juice is actually Persian lime juice. Have You Tried Delicious Burnt Ends?

delcious burnt ends in melbourne flBurnt Ends are referred to as “the old pig candy”. This was what they called pig candy before the newest incarnation of that dish. So what are burnt ends? The name doesn’t sound that delicious, does it? But the name is misleading.

As BBQ became more popular and in-demand, pitmasters would set aside the end pieces that may be tougher, drier, or oddly shaped. Many times the ends and edges could be the fattiest part of the meat and cooks would put them into stews or make them into hardy appetizers.

It wasn’t long before some pitmasters realized the power of these morsels and began to re-smoke them and cover them in a delicious sweet sauce. The practice started in the 1970’s to be exact and burnt ends lovers haven’t looked back.

They are pretty much a staple of any real BBQ place in the south, all the way up to Kansas City and beyond. You can find this item in the “starters” section of our menu.

Smoking Meat from a Historical Point of View

delicious bbq ribs melbourne florida eau gallieIf you go back many thousands of years ago and postulate how our ancient ancestors may have cooked meat, you can instantly picture a fire-pit and a stick with meat on it. In many ways, conventional grill cooking is still very much like that. The exposure of raw meat to flame sears in the juiciness and cooks the meat, killing any life threatening bacteria that may be on it.

It probably wasn’t much later that humans started experimenting with slow cooking food. When they began to conquer their environment,  removing themselves from the food-chain, they could turn their attention on how change the flavor or texture of the food they had been eating for millenia.

Smoking meat serves several functions. It cooks the meat to where it is safe to eat. It creates a soft, melt in your mouth type texture. And it adds smoky flavor.

The earliest meat smokers would smoke meat until it was totally dried out. This allowed it to be eaten over time and not spoil. The early humans were mostly nomadic. So, being able to take the food with you was an important element.

Modern meat smoking is still used for cooking as well as preserving. Here at Charlie and Jakes, we slow cook meats in our large smoker that seals in the juice and tenderizes the meat. If you have not tried our smokes ribs or chicken, you have been missing out.

What is Pig Candy?

pig candy Melbourne FLIt sounds a little crazy right? The words ‘pig’ and ‘candy’ put together. But that is the only way to describe this delicious treat. In this article we will go over the details of this item. 

Pig candy is a type of dessert. It is made with thick strips of smoked bacon and pecans. It is then coated with brown sugar. Another name for this dish is “glazed bacon”.

This dish is especially popular in the southeastern United States. It has really taken on a life of its own in Washington D.C. (of all places) and Martha Stewart even featured it on “Martha Stewart’s Living”.

There are about 100 different recipes online so when and where you get it makes all the difference in the world.

Some folks eat it as desert but it an excellent snack. Protein and carbs can make for a great tide-me-over until din din.

How We Cook Them

The wings go into our smoker for three to four hours. They are then taken from the smoker and flash fried (to give them a crisp) then immediately dipped into the sauce/flavor of your choosing. Flavors we offer are: Buffalo (Hot or Mild), BBQ (Sweet, Mild or Hot), Teriyaki, Caribbean Jerk, Thai Chili or Sesame Garlic. Order 10, 20, 50 or 100 wings.
