The name “burnt ends” doesn’t sound very appealing does it? After all anything burn can’t be good, right? Well, the name may not be the best but the dish is out of this world. So, what are burnt ends?
It’s simply the end pieces of a smoked brisket. They are covered in a delicious sweet sauce and served hot. And they are DELICIOUS. You can find them on our menu under appetizers.
Several BBQ hotbeds take credit for being the first to serve burnt ends as a separate dish. One very credible location is that of Kansas City, Mo. A website based there seems to have a lot of information regarding the sweet treat and even refers to it as “Kansas City caviar”.
